Wild Canary Rockfish has a delicate, nutty, sweet flavor. The fillets are very lean with medium to firm texture and medium-sized flakes. Since rockfish tend to flake easily, grilling is not the ideal preparation method. All fillets are cut in-house to order, skin on.
